Waffles

My kids are in love with waffles. Especially these waffles, which kind of boggles my mind because they like them even more than the chocolate waffles. Go figure. It's what I get for having boys instead of girls.

 

Waffles
1 3/4 c. flour - I use half white flour and half whole wheat
1 Tbsp. baking powder
1 3/4 c.milk
1/2 c. oil
2 eggs

Combine the milk, oil, and eggs and a medium bowl. Add in flour and baking powder. Stir to combine just until the dry ingredients are mixed in. The batter should still be a little lumpy. Pour batter into a lightly greased waffle iron and bake following the manufacturer's instructions.

Waffles

My kids love it when I make them breakfast in the mornings. It is never often enough for them! Waffles are a favorite. Well, anything that involves syrup is good for them!

 

Waffles
1 3/4 c. milk
1/2 c. oil
2 eggs
1 3/4 c. flour
1 Tbsp. baking powder
1/4 tsp. salt

Mix the milk, oil, and eggs in a medium bowl. Add the flour, baking powder, and salt.  Mix well, but do not over beat. The batter will still have some lumps. Pour into heated and greased waffle iron and cook according to the manufacture's instructions.

Crock Pot Blueberry Breakfast Casserole

Waking up to breakfast that is hot and done is always nice. I like to sleep in on my days off work but the boys still like to have a nice, hot breakfast. This works for all of us! I put the stuff in the crock pot before I go to bed, turn it on low, and breakfast is done when we wake up! And if I still don't want to get up, the boys can serve themselves! This is kind of French Toast, kind of not. Whatever, It tastes good and they like it. And there is syrup if you feel really adventurous and want to make the syrup as well. Or buy it at the store. You can actually use any berry for this. I used blueberries for this one, but sliced strawberries or raspberries work just as well.

 

Crock Pot Blueberry Breakfast Casserole
1 loaf Italian or French bread
1 c. blueberries
8 oz. cream cheese
12 eggs
2 c. milk

Spray your crock pot with non-cook spray. Cut about 3/4 of your loaf of bread into cubes. I cut it into thick slices and cubed those. Put 1/2 the bread cubes in the crock pot.Sprinkle the blueberries over the bread. Cut the cream cheese into cubes and sprinkle those over the bread. Cover with the remaining 1/2 of the bread cubes. In a medium bowl, whisk the milk and eggs together. Pour that evenly over the bread cubes. You can top that with a little maple syrup, cinnamon, etc, if desired. Turn crock pot on to low and allow to cook overnight.

If you want to make your own syrup for this:
1 c. sugar
1 c. water
2 Tbsp. corn starch
1 c. blueberries

In a medium sized saucepan over medium-high heat, cook the water, sugar, and cornstarch until it is thickened. Add the blueberries and simmer about 10 minutes. Serve over the breakfast casserole.

Cake Batter Pancakes

The boys caught me in a moment of weakness with this recipe. They like to hang over my shoulder whenever I am on the computer, just in case I may do something mildly interesting. This recipe was spotted while I was looking around on Pinterest for some dinner inspiration and much begging ensued. I caved - but only because I had a cake mix that had been sitting on the shelf in the pantry for too long and needed to be used. The original recipe can be found here. She must have used a different kind of sprinkle than I did because my sprinkles melted into the batter and made it a multi colored mess that they boys thought was great!

 

Cake Batter Pancakes
1 1/2 c. flour
2 tsp. baking powder
1 Tbsp. sugar
1/2 c. white cake mix
1 tsp. vanilla
1 egg
1 1/2 c. milk
3 Tbsp. butter, melted
3 Tbsp. sprinkles, optional

Mix together flour, baking powder, and cake mix in a bowl.  Add vanilla, egg, milk, and melted butter; mix together well. Some lumps with remain and that's fine. Add sprinkles, if desired, and stir. Pour about 1/4 cup batter onto greased, hot griddle for each pancake. Wait until bubbles form on the top of the batter and begin to pop, then turn with a pancake turner to cook on the other side.= until golden. We eat these with regular maple syrup, but you could use all sorts of things - flavored syrups, fruit, whipped cream, etc.
