Coconut Cream Pie Dip

Another of our dips for dip night! This recipe I got from a friend at work who likes to help me out with ideas of things to make and bring in... This recipe uses cream of coconut which I find in the Asian food section at my grocery store.

Coconut Cream Pie Dip
15 oz. can cream of coconut
1/4 c. milk
1 large box instant vanilla pudding
14 oz. can sweetened condensed milk
2 c. flaked coconut
8 oz. tub Cool Whip

Using an electric hand mixer, combine the cream of coconut and milk in a medium bowl and mix on medium until smooth. Add the pudding mix (powder ONLY, do not make pudding) and sweetened condensed milk and mix until well combined. Stir in 1 c. coconut and the Cool Whip. Pour into a 9x13 pan and spread smooth. Toast the remaining 1 c. coconut in a frying pan over medium heat just until golden brown. Sprinkle over the top of the dip. Serve with graham crackers, vanilla wafers, animal crackers, etc.

Bean Dip

This is another family favorite from years ago. I adapted it a bit for my family from the original so I could feel a little better about serving it for dinner. This is so versatile! We use it for nachos, tacos, burritos, etc. The boys all love it, too! The picture is from a nacho night with all the toppings we like - lettuce, cheese, olives, sour cream. No tomatoes that night. Only person missed them. We aren't huge tomato eaters.

Bean Dip
1 pound hamburger
3 cans refried beans
1 can cheese soup
1 package taco seasoning

Brown the hamburger and drain the grease. Mix all remaining ingredients together in a pot over medium to medium-high heat. Heat until warm, then serve as you choose.

Pizza Dip

This is another of our favorite dips when we have dip night. I like it best with Ritz crackers or pita chips. The boys aren't as picky and eat it with anything - tortilla chips, vegetables, whatever is still left on the table!

Pizza Dip
8 oz. cream cheese, softened
1/2 c. pizza sauce
mozzarella cheese
favorite pizza toppings

Mix the cream cheese and pizza sauce together, then spread it on the bottom of a 9 inch pie plate. Top the cream cheese mixture with mozzarella cheese, then your favorite pizza toppings. I usually just use the mini pepperonis because everyone in my house likes those and they are easy to scoop up. Bake at 350 degrees about 20 minutes. Cheese should be melted and the dip should be heated all the way through.

Fruit Dip

I make this dip when we have dip parties. Well, they are karaoke parties we serve dip at because the dips are easy and people can pick and choose which items they use for the dips. This is a popular dip and usually disappears pretty quickly, but it is delicious and goes with a variety of fruits. Or pretzels. Or cookies.

Fruit Dip
8 oz. cream cheese, softened
1 large (13 oz) jar marshmallow creme

Mix together and serve. Refrigerate if you have any leftovers!

Bacon Ranch Cream Cheese Dip

I find recipes everywhere. I find them on the internet, get them from friends, get them from family, I even go to work and scribble them down from co-workers, and go to the doctor's office and find a recipe in the magazine I peruse while I wait and write down that recipe I just have to try on a scrap in my purse . I have little pieces of paper floating around with random recipes scribbled on them. Little pieces of paper are easy to lose and I have lost multiple recipes that I really, really wish I still had. This recipe is one of those. I found it.... somewhere and wrote it down. I know I put it somewhere safe, but I can't find my piece of paper so I am really glad I had the fore thought to get it on my computer before I lost my piece of paper. That doesn't happen often.

This dip is a favorite. My husband loves to sing and is one of the best singers I have ever heard. So we do karaoke nights from time to time and I make this for our karaoke nights. It is SO GOOD! Everyone asks for it now when we have parties or get-togethers. Friends now ask me to bring it to parties. Delicious!

Bacon Ranch Cream Cheese Dip
8 oz. cream cheese, softened
1 packet ranch dip mix (find the salad dressings)

Peanut Butter Cookie Dough Dip

Who doesn't love Reese's Peanut Butter Cups? Maybe I shouldn't say that, because I am sure that somewhere out there is someone who doesn't like them. Actually, my sister-in-law doesn't like peanut butter so she may be one who doesn't like them. Anyway, I do like them. A lot. So does my family. At Halloween, they are the first things to disappear - and not just because I ate them all. When I found the recipe for this dip, I knew I had to make it. It was a HUGE hit!

Peanut Butter Cookie Dough Dip
1/2 c. butter, softened
1/2 c. brown sugar
1/4 c. creamy peanut butter
8 oz. cream cheese, softened
3/4 c. powdered sugar
1 tsp. vanilla
1/2 c. mini chocolate chips (or use a whole cup - how can you go wrong with more chocolate??)
8 oz. package mini Reese's Peanut Butter cups

Mix butter and cream cheese together, mixing until smooth. Add brown sugar, then add peanut butter, powdered sugar, and vanilla and mix until well combined. Stir in chocolate chips and peanut butter cups. Serve with graham crackers, vanilla wafers, etc. Store in refrigerator.
